America’s Ghostpickers, the Credit’s Only Swallowed
My first Moosewood! Yes, you read that right. It's never too late to start with a cookbook written in 1974. I had to cook for a dinner party of women- ugh!
Oh thank you, but I can't have:
Wheat
Dairy
Natural sugar
Soy
Balsamic vinegar (there is no vinegar in this)
Water
Cheese, but summer goat cheese is okay, most of the time

But because I am out of my "meal course" element, I followed Moosewood's directions-yup, I did. I can read...and do! Triumph. Unless, of course, I'm trying to do a Blue Apron. The thing is a favorite of my husband, I can't stand the plastic (and the complexity). And the waste management part since I'm the house trash sorting queen. Okay, family trash sorting queen.
So the sun has sailed past Solstice and into Cancer- birthday month! Lots going on in the world so I chose to make Zuccanoes (zucchini canoes) as a reflection of the fragile canoes we're finding ourselves and humanity in these days. We don't have many paddles, but if we stick together we can handle it.

You see, I was supposed to bring fritatta to this dinner party. The fritatta, I hate to inform you, has headed down to the border to protest the injustices going on against asylum-seeking immigrants, families and children. So in that spirit we have canoes to eat so we can all paddle---and paddle hard. Don't get me wrong, I'm not trivializing. I'm tying your time reading this post into something meaningful (and virtually nutritious).
Mark your calendars for June 30th to show up and turn out. If you look REALLY hard at it, all the green rimmed circles remind you of these zucchini.
My daughter asked: Does it have mushrooms? I told her no. She said it was yummy. Then I told her I lied and that it does. Ah the foggy mystique of hidden Creminis!
